Following on from our 2014 commercial kitchen at Yatala Labour Prison, GGA recently delivered a new operations and catering building to support the site’s major expansion. The project brings a paradigm shift to inmates’ lives by providing healthier food options and fostering education and personal growth.
The purpose designed facility includes kitchen, bulk cooking, sandwich prep, wet prep, special diets prep, dry store, separated cool storage, freezer, dishwashing, trolley storage & wash, plating, receiving and waste handling. The new expansive food services facility demonstrates best practice with up-to-date equipment and processing facilities,
enabling healthier food options, accommodation of special diets and more complex food preparation. Fully staffed by prisoners, the inmates are now learning valuable commercial cooking skills in a modern facility, through certificate courses.
In addition to the receiving and waste zones in the catering building, other back of house functions include the Stores & Distribution Centre and Gatehouse & Sallyport. GGA ingeniously optimised operational costs by reimagining the Store & Distribution area, employing data-driven analysis to streamline efficiency.
